Strawberry tart… one of my favorite desserts…very popular in France.
Unfortunately strawberries are not available all year long, so when it is the season, I just go for it as often as I can!

Why did you choose this Strawberry tart recipe?
Cyndie: I chose Strawberry Tart (Tarte aux Fraises) because it is my whole time favorite French patisserie. When I was growing-up, in the south of France, every year for my birthday Maman would bring home a delicious freshly baked Strawberry Tart from our local artisan patisserie shop. Strawberry Tart reminds me very much of summer holiday in France (August – my birthday month).
What is your cooking tip for this recipe?
Cyndie: To prevent the delicate crust from breaking, leave it in the baking tray while assembling the tart.
